- 2 cups diced carrots
- 2 cups diced potatoes
- 1 cup diced parsnips
- 1 cup diced beets
- 2 tablespoon olive oil
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 1 teaspoon dried rosemary
Preheat your air fryer to 375°F (190°C).
In a large bowl, toss the diced vegetables with olive oil, salt, pepper, and rosemary.
Place the vegetables in the air fryer basket in a single layer.
Cook for 20 minutes, shaking the basket halfway through.
