Ingredients 

Main Ingredients

  • 1 can black beans drained and rinsed
  • 1 cup corn kernels
  • 1 red bell pepper diced
  • 1 avocado sliced
  • 1 small red onion diced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 0.5 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 small corn tortillas
  • Fresh cilantro chopped (optional)
  • Lime wedges optional

Instructions 

  1. Preheat your air fryer to 375°F (190°C).
  2. In a bowl, mix black beans, corn, red bell pepper, red onion, olive oil, chili powder, cumin, garlic powder, salt, and pepper.
  3. Place the mixture in the air fryer basket and cook for 10 minutes, shaking halfway through.
  4. Warm tortillas in a pan or microwave.
  5. Fill tortillas with the cooked mixture, top with avocado slices, cilantro, and a squeeze of lime.
