Main Ingredients
- 2 medium zucchini sliced into thin rounds
- 1 cup breadcrumbs use panko for extra crunch
- ¼ cup nutritional yeast
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 cup unsweetened almond milk or any plant-based milk
Preheat your air fryer to 400°F (200°C).
In a mixing bowl, combine breadcrumbs, nutritional yeast, garlic powder, paprika, salt, and black pepper.
Dip each zucchini slice into the almond milk, then coat with the breadcrumb mixture.
Place the coated zucchini slices in the air fryer basket in a single layer.
Air fry for 10-15 minutes, flipping halfway through, until golden and crispy.
