  • 2 cups Almond flour
  • 1 cup Sugar
  • 1 teaspoon Baking powder
  • ½ teaspoon Baking soda
  • ¼ teaspoon Salt
  • 1 cup Almond milk
  • cup Olive oil
  • 2 tablespoon Lemon juice
  • 1 tablespoon Lemon zest
  • 1 teaspoon Vanilla extract

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a cake pan.
  2. In a mixing bowl, whisk together almond flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix almond milk, olive oil, lemon juice, lemon zest, and vanilla extract.
  4. Combine wet and dry ingredients. Pour the batter into the prepared cake pan.
  5. Bake for 30 minutes or until a toothpick comes out clean. Let it cool before serving.
