Ingredients 

Main Ingredients

  • 1 cup Quinoa
  • 2 cups Vegetable Broth
  • 1 can Black Beans drained and rinsed
  • 1 cup Corn frozen or fresh
  • 1 Red Bell Pepper chopped
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1 tablespoon Olive Oil
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. Rinse the quinoa under cold water.
  2. 2. In a saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked.
  3. 3. In a large mixing bowl, combine the cooked quinoa, black beans, corn, red bell pepper, cumin, chili powder, olive oil, salt, and black pepper. Mix well.
  4. 4. Serve warm or chilled.
