Ingredients 

Main Ingredients

  • 2 cups elbow macaroni uncooked
  • 1 cup vegan mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon sugar
  • 1 teaspoon yellow mustard
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup celery chopped
  • 1 cup red bell pepper chopped
  • ¼ cup red onion finely chopped

Instructions 

  1. Cook the macaroni according to package instructions. Drain and rinse with cold water.
  2. In a large mixing bowl, combine the vegan mayonnaise, apple cider vinegar, sugar, mustard, salt, and pepper. Mix well.
  3. Add the cooked macaroni, celery, red bell pepper, and red onion to the bowl. Stir until well combined.
  4. Refrigerate for at least 1 hour before serving to allow the flavors to meld together.
