Ingredients

  • 2 cups shredded cabbage
  • 1 cup shredded carrots
  • 1 apple, julienned
  • ¼ cup chopped fresh parsley
  • ¼ cup apple cider vinegar
  • 2 tablespoon olive oil
  • 1 tablespoon maple syrup
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. In a large mixing bowl, combine the shredded cabbage, shredded carrots, julienned apple, and chopped parsley.
  2. In a small bowl, whisk together the apple cider vinegar, olive oil, maple syrup, Dijon mustard, salt, and black pepper.
  3. Pour the dressing over the cabbage mixture and toss to coat evenly.
  4. Let the slaw sit for at least 10 minutes before serving to allow the flavors to meld.
