  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • ¼ cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup unsweetened applesauce
  • 1 cup non-dairy milk
  • ¼ cup vegetable oil

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, mix the applesauce, non-dairy milk, and vegetable oil.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Pour the batter into a greased baking dish.
  6. Bake for 25 minutes or until a toothpick inserted in the center comes out clean.
  7. Let it cool before serving.
