Ingredients

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 0.5 cup coconut oil, melted
  • 0.5 cup brown sugar
  • 0.25 cup applesauce
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 cup diced apples

Instructions 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix oats, flour, cinnamon, baking soda, and salt.
  3. In another bowl, whisk together melted coconut oil, brown sugar, applesauce, and vanilla extract.
  4. Combine wet and dry ingredients, then fold in diced apples.
  5. Scoop dough onto the baking sheet, flatten slightly.
  6. Bake for 10-12 minutes or until golden brown.
  7. Let cool on a wire rack.
