Ingredients

  • 2 cups rolled oats
  • 1 cup unsweetened applesauce
  • ½ cup almond milk
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 apple, diced

Instructions 

  1. Preheat oven to 350°F (175°C). Grease a muffin tin or line with muffin liners.
  2. In a large bowl, mix together oats, applesauce, almond milk, maple syrup, and vanilla extract.
  3. Add in cinnamon, baking powder, and salt. Stir until well combined.
  4. Fold in diced apple.
  5. Divide the mixture evenly among the muffin cups.
  6. Bake for 25 minutes or until the tops are golden brown.
  7. Let cool for a few minutes before removing from the tin.
