Ingredients 

Pancake Batter

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup almond milk
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon vanilla extract
  • 1 apple, peeled, cored, and grated
  • 1 tablespoon vegetable oil (for cooking)

Instructions 

  1. In a bowl, mix flour, sugar, baking powder, and salt.
  2. In another bowl, combine almond milk, apple cider vinegar, and vanilla extract.
  3. Pour wet ingredients into dry ingredients and mix until just combined.
  4. Fold in grated apple.
  5. Heat a non-stick pan over medium heat and lightly oil it.
  6. Pour ¼ cup of batter onto the pan for each pancake.
  7. Cook until bubbles form on the surface, then flip and cook until golden brown.
