Preheat oven to 375°F (190°C).
In a bowl, mix apples, sugar, raisins, cinnamon, nutmeg, and lemon juice.
Lay out one sheet of phyllo dough, brush with melted vegan butter, and sprinkle with breadcrumbs.
Repeat with 5 more sheets.
Spread apple mixture along one edge of the dough.
Roll up the dough, tucking in the ends.
Place on a baking sheet and brush with remaining butter.
Bake for 40 minutes or until golden brown.
