Instructions
Preheat your oven to 400°F (200°C).
In a mixing bowl, combine flour and vegan butter. Mix until it resembles coarse crumbs.
Add ice water gradually and mix until the dough comes together. Wrap in plastic wrap and refrigerate for 30 minutes.
In another bowl, combine diced apples, sugar, cinnamon, lemon juice, and cornstarch. Mix well.
Roll out the dough on a floured surface and cut into squares. Place apple mixture in the center of each square.
Fold the squares into triangles and seal the edges. Place on a baking sheet.
Bake for 20-25 minutes or until golden brown. Let cool before serving.
