- 4 cups arugula
- ¼ cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- ¼ cup toasted pine nuts optional
In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper.
In a large bowl, toss arugula with the vinaigrette.
Top with toasted pine nuts if using.
