  • 1 bunch asparagus, trimmed
  • 1 tablespoon olive oil
  • 0.25 cup vegan Parmesan cheese, grated
  • 1 lemon, zested and juiced
  • Salt and pepper to taste

Instructions 

  1. Blanch asparagus in boiling water for 2-3 minutes until tender-crisp. Drain and cool.
  2. Toss asparagus with olive oil, lemon juice, lemon zest, salt, and pepper.
  3. Sprinkle with vegan Parmesan cheese before serving.
