Ingredients

  • 1 bunch asparagus trimmed and cut into 1-inch pieces
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • to taste salt
  • to taste pepper

Instructions 

  1. 1. In a pot, sauté the onion and garlic until translucent.
  2. 2. Add the asparagus and vegetable broth. Bring to a boil, then simmer for 15 minutes.
  3. 3. Blend the soup until smooth.
