Ingredients 

Main Ingredients

  • 2 lbs potatoes waxy, like Yukon Gold
  • 1 cup vegetable broth
  • ¼ cup apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 medium red onion finely chopped
  • 2 tablespoon olive oil
  • to taste salt and pepper
  • 2 tablespoon fresh parsley chopped

Instructions 

  1. 1. Boil potatoes in a large pot until tender, about 15-20 minutes. Drain and let cool slightly.
  2. 2. While potatoes are cooling, whisk together vegetable broth, apple cider vinegar, Dijon mustard, and olive oil in a mixing bowl.
  3. 3. Peel and slice the potatoes, then add to the mixing bowl along with the finely chopped red onion. Toss to combine.
  4. 4. Season with salt and pepper to taste. Garnish with chopped fresh parsley before serving.
