- 2 Avocados, diced
- 1 cup Corn kernels, cooked
- 1 Red bell pepper, diced
- ¼ cup Red onion, finely chopped
- ¼ cup Cilantro, chopped
- 1 Lime, juiced
- 1 tablespoon Olive oil
- to taste Salt and pepper
1. In a mixing bowl, combine the diced avocados, corn kernels, red bell pepper, red onion, and cilantro.
2. Drizzle with lime juice and olive oil.
3. Season with salt and pepper to taste.
4. Gently toss to combine.
5. Serve immediately or chill for later.
