Ingredients

  • 1 can Black Beans drained and rinsed
  • 1 large Avocado peeled and sliced
  • 1 cup Corn cooked
  • 1 cup Cherry Tomatoes halved
  • 1 cup Lettuce chopped
  • 4 large Tortillas
  • 1 tablespoon Lime Juice freshly squeezed
  • 1 teaspoon Cumin
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste

Instructions 

  1. 1. In a mixing bowl, combine black beans, corn, cherry tomatoes, lettuce, lime juice, cumin, salt, and pepper.
  2. 2. Lay out the tortillas on a flat surface.
  3. 3. Divide the avocado slices evenly among the tortillas.
  4. 4. Spoon the black bean mixture onto each tortilla.
  5. 5. Roll up the tortillas tightly and serve immediately.
