Main Ingredients
- 2 ripe avocados
- 1 small tomato, diced
- 0.25 cup red onion, finely chopped
- 0.25 cup corn kernels
- 0.25 cup black beans, rinsed and drained
- 1 tablespoon lime juice
- Salt and pepper to taste
- Fresh cilantro, chopped (optional)
Cut the avocados in half and remove the pits.
Scoop out a bit of the avocado flesh to create a larger cavity.
In a bowl, mix the diced tomato, red onion, corn, black beans, lime juice, salt, and pepper.
Fill the avocado halves with the mixture.
Garnish with fresh cilantro if desired.
