Ingredients

  • 2 ripe avocados
  • 1 small tomato, diced
  • 0.25 cup red onion, finely chopped
  • 0.25 cup corn kernels
  • 0.25 cup black beans, rinsed and drained
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Fresh cilantro, chopped (optional)

Instructions 

  1. Cut the avocados in half and remove the pits.
  2. Scoop out a bit of the avocado flesh to create a larger cavity.
  3. In a bowl, mix the diced tomato, red onion, corn, black beans, lime juice, salt, and pepper.
  4. Fill the avocado halves with the mixture.
  5. Garnish with fresh cilantro if desired.
