Ingredients 

Crust

  • 1.5 cups Graham cracker crumbs or vegan cookie crumbs
  • 0.25 cup Coconut oil melted

Filling

  • 2 large Avocados ripe
  • 1 cup Cashews soaked overnight
  • 0.5 cup Coconut cream
  • 0.5 cup Maple syrup
  • 0.25 cup Lime juice freshly squeezed
  • 1 tablespoon Lime zest
  • 1 teaspoon Vanilla extract

Instructions 

  1. 1. In a bowl, mix graham cracker crumbs and melted coconut oil. Press the mixture into the bottom of a springform pan to form the crust.
  2. 2. In a blender, combine avocados, soaked cashews, coconut cream, maple syrup, lime juice, lime zest, and vanilla extract. Blend until smooth and creamy.
  3. 3. Pour the filling over the crust and spread evenly. Refrigerate for at least 4 hours or until set.
  4. 4. Once set, remove from the springform pan, slice, and serve chilled.
