Ingredients 

Main Ingredients

  • 2 large Zucchini spiralized
  • 1 large Avocado ripe
  • 1 cup Basil leaves fresh
  • 2 cloves Garlic
  • 2 tablespoons Lemon juice freshly squeezed
  • ¼ cup Olive oil
  • ¼ cup Pine nuts toasted
  • to taste Salt
  • to taste Black pepper freshly ground

Instructions 

  1. 1. Spiralize the zucchini into noodles and set aside.
  2. 2. In a blender, combine avocado, basil leaves, garlic, lemon juice, olive oil, pine nuts, salt, and black pepper. Blend until smooth.
  3. 3. Toss the zucchini noodles with the avocado pesto until well coated.
  4. 4. Serve immediately, garnished with extra pine nuts and basil if desired.
