- 2 ripe avocados diced
- 1 cup cherry tomatoes halved
- 1 small red onion finely chopped
- 2 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 1 clove garlic minced
- to taste salt and pepper
- 1 baguette sliced and toasted
In a mixing bowl, combine diced avocados, halved cherry tomatoes, and finely chopped red onion.
Add olive oil, balsamic vinegar, and minced garlic. Mix well.
Season with salt and pepper to taste.
Top toasted baguette slices with the avocado-tomato mixture.
