  • 1 cup dried azuki beans
  • 3 cups water
  • 1 cup coconut milk
  • ½ cup sugar
  • 1 teaspoon vanilla extract

Instructions 

  1. Rinse and soak azuki beans overnight.
  2. Drain and add beans to a pot with water. Boil, then simmer for 30 minutes until soft.
  3. Blend beans with coconut milk, sugar, and vanilla until smooth.
  4. Chill mixture in the fridge, then churn in an ice cream maker.
