  • 4 cups Baby Kale
  • 1 cup Cherry Tomatoes, halved
  • 1 cup Cucumber, sliced
  • ¼ cup Red Onion, thinly sliced
  • ¼ cup Olive Oil
  • 2 tablespoon Lemon Juice
  • 1 teaspoon Dijon Mustard
  • 1 clove Garlic, minced
  • to taste Salt and Pepper

Instructions 

  1. 1. In a large mixing bowl, combine baby kale, cherry tomatoes, cucumber, and red onion.
  2. 2. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, and minced garlic.
  3. 3. Pour the dressing over the salad and toss to combine.
