Main Ingredients
- 2 large Eggplants Roasted
- 2 Tomatoes Chopped
- 1 large Onion Chopped
- 2 cloves Garlic Minced
- 1 inch Ginger Minced
- 2 tablespoon Oil
- 1 teaspoon Cumin Seeds
- 1 teaspoon Turmeric Powder
- 1 teaspoon Red Chili Powder
- 1 teaspoon Garam Masala
- to taste Salt
- 2 tablespoon Cilantro Chopped, for garnish
Roast the eggplants over an open flame until the skin is charred and the flesh is soft. Let them cool, then peel and mash the flesh.
Heat oil in a pan. Add cumin seeds and let them splutter.
Add chopped onions, garlic, and ginger. Sauté until golden brown.
Add chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes are soft.
Add the mashed eggplant and mix well. Cook for another 10 minutes.
Stir in garam masala and cook for 2 more minutes.
Garnish with chopped cilantro and serve hot.
