Ingredients 

Main Ingredients

  • 4 large potatoes washed and diced
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup vegan mayonnaise
  • 2 tablespoon dijon mustard
  • ¼ cup chopped green onions
  • ¼ cup chopped fresh parsley

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Place the diced potatoes on a baking sheet. Drizzle with olive oil, and sprinkle with salt and black pepper. Toss to coat evenly.
  3. Bake in the preheated oven for 30-35 minutes, or until the potatoes are golden brown and crispy. Allow to cool slightly.
  4. In a large mixing bowl, combine the vegan mayonnaise, dijon mustard, chopped green onions, and chopped parsley.
  5. Add the baked potatoes to the bowl and toss gently to coat.
  6. Serve warm or chilled. Enjoy!
