Main Ingredients
- 4 carrots peeled and chopped
- 2 parsnips peeled and chopped
- 2 sweet potatoes peeled and chopped
- 1 red onion peeled and chopped
- 2 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon dried thyme
Preheat oven to 400°F (200°C).
Peel and chop all the vegetables into bite-sized pieces.
Place the vegetables in a large bowl, add olive oil, salt, pepper, and thyme. Toss to coat.
Spread the vegetables evenly on a baking sheet.
Bake for 40 minutes, stirring halfway through, until vegetables are tender and golden brown.
