Ingredients 

Main Ingredients

  • 4 carrots peeled and chopped
  • 2 parsnips peeled and chopped
  • 2 sweet potatoes peeled and chopped
  • 1 red onion peeled and chopped
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Peel and chop all the vegetables into bite-sized pieces.
  3. Place the vegetables in a large bowl, add olive oil, salt, pepper, and thyme. Toss to coat.
  4. Spread the vegetables evenly on a baking sheet.
  5. Bake for 40 minutes, stirring halfway through, until vegetables are tender and golden brown.
