Ingredients 

Main Ingredients

  • 1 cup basmati rice
  • 2 cups vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup peas
  • 2 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large oven-safe pot over medium heat.
  3. Add onion and garlic, sauté until translucent.
  4. Add carrot, bell pepper, and zucchini, cook for 5 minutes.
  5. Stir in rice, vegetable broth, peas, thyme, oregano, salt, and pepper.
  6. Bring to a boil, then cover and transfer to the oven.
  7. Bake for 45 minutes or until rice is tender and liquid is absorbed.
  8. Fluff with a fork before serving.
