Baked Vegetable Rice Pilaf Recipe

Main Ingredients
- 1 cup basmati rice
- 2 cups vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup peas
- 2 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
Preheat oven to 375°F (190°C).
Heat olive oil in a large oven-safe pot over medium heat.
Add onion and garlic, sauté until translucent.
Add carrot, bell pepper, and zucchini, cook for 5 minutes.
Stir in rice, vegetable broth, peas, thyme, oregano, salt, and pepper.
Bring to a boil, then cover and transfer to the oven.
Bake for 45 minutes or until rice is tender and liquid is absorbed.
Fluff with a fork before serving.
