Ingredients 

Vegetables

  • 2 cups Broccoli florets
  • 2 cups Carrot slices
  • 1 cup Bell pepper strips
  • ¼ cup Balsamic vinegar
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the broccoli, carrots, and bell peppers.
  3. Drizzle with balsamic vinegar and olive oil. Season with salt and pepper. Toss to coat.
  4. Spread the vegetables evenly on a baking sheet.
  5. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly caramelized.
  6. Serve warm.
