  • 4 cups cubed bread preferably stale
  • 2 ripe bananas mashed
  • 2 cups almond milk
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 pinch salt

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. Grease a baking dish.
  3. In a large bowl, combine the mashed bananas, almond milk, maple syrup, vanilla extract, cinnamon, nutmeg, and salt.
  4. Add the cubed bread to the bowl and mix until the bread is well-coated.
  5. Transfer the mixture to the greased baking dish.
  6. Bake for 45 minutes or until the top is golden and the pudding is set.
  7. Let it cool slightly before serving.
