  • 2 ripe bananas
  • 1 cup flour
  • 1 cup almond milk
  • 1 tablespoon baking powder
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • Fresh berries for topping
  • Vegan yogurt for topping

Instructions 

  1. Mash bananas in a bowl.
  2. Add flour, almond milk, baking powder, maple syrup, vanilla extract, and salt. Mix until smooth.
  3. Heat a non-stick pan over medium heat.
  4. Pour batter into the pan to form pancakes. Cook until bubbles form, then flip and cook until golden brown.
  5. Layer pancakes with vegan yogurt and fresh berries to create parfaits.
