Main Ingredients
- 1 ½ cups all-purpose flour
- 1 cup grated zucchini
- 1 cup mashed ripe bananas about 2 large bananas
- ½ cup sugar
- ¼ cup coconut oil melted
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
Preheat your oven to 350°F (175°C). Grease a loaf pan and set aside.
In a large mixing bowl, combine the flour, baking soda, baking powder, salt, and cinnamon.
In another bowl, mix the grated zucchini, mashed bananas, sugar, melted coconut oil, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
