Ingredients 

Main Ingredients

  • 1 loaf Baguette cut into 4 pieces
  • 1 cup Carrots julienned
  • 1 cup Daikon radish julienned
  • ½ cup Cucumber thinly sliced
  • 1 cup Cilantro fresh
  • 1 block Tofu firm, sliced
  • 2 tablespoon Soy sauce
  • 1 tablespoon Olive oil
  • 1 tablespoon Rice vinegar
  • 1 tablespoon Sugar
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

Instructions 

  1. 1. Mix carrots, daikon radish, rice vinegar, sugar, and salt in a bowl. Let it sit for 10 minutes.
  2. 2. Heat olive oil in a pan over medium heat. Add tofu slices and cook until golden brown. Add soy sauce and black pepper. Cook for another 2 minutes.
  3. 3. Cut the baguette pieces in half lengthwise. Toast if desired.
  4. 4. Assemble the sandwich by layering tofu, pickled vegetables, cucumber slices, and cilantro in the baguette.
  5. 5. Serve immediately and enjoy!
