Barley Chickpea Salad Recipe

Main Ingredients
- 1 cup barley uncooked
- 1 can chickpeas drained and rinsed
- 1 cup cherry tomatoes halved
- 1 cucumber diced
- ¼ cup red onion finely chopped
- ¼ cup parsley chopped
- 2 tablespoon olive oil
- 1 tablespoon lemon juice freshly squeezed
- 1 teaspoon salt or to taste
- ½ teaspoon black pepper freshly ground
1. Cook the barley according to package instructions. Drain and let it cool.
2. In a large mixing bowl, combine the cooked barley, chickpeas, cherry tomatoes, cucumber, red onion, and parsley.
3. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
4. Pour the dressing over the salad and toss to combine.
5. Serve immediately or refrigerate for later.
