Ingredients

  • 2 cups Chickpeas cooked and drained
  • 1 cup Celery chopped
  • 1 cup Red Onion chopped
  • ½ cup Vegan Mayonnaise
  • 1 tablespoon Dijon Mustard
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste

Instructions 

  1. 1. In a mixing bowl, mash the chickpeas with a fork until they are broken down but still have some texture.
  2. 2. Add the chopped celery and red onion to the bowl.
  3. 3. Stir in the vegan mayonnaise, Dijon mustard, lemon juice, salt, and black pepper.
  4. 4. Mix everything together until well combined.
  5. 5. Serve immediately or refrigerate for later.
