Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • ¼ cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup unsweetened almond milk
  • ¼ cup vegetable oil

Instructions 

  1. Preheat your oven to 400°F (200°C). Grease a muffin tin or line with paper muffin liners.
  2. In a large mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, combine the almond milk and vegetable oil.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Divide the batter evenly among the prepared muffin cups.
  6. Bake for 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Allow the muffins to cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
