Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 large red bell pepper, chopped
  • 1 large green bell pepper, chopped
  • 400 g canned tomatoes, chopped
  • 2 cups vegetable broth
  • 500 g codfish, cut into chunks
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoon parsley, chopped

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and garlic, and sauté until softened.
  3. Add the chopped bell peppers and cook for another 5 minutes.
  4. Stir in the chopped tomatoes and vegetable broth. Bring to a simmer.
  5. Add the codfish chunks, paprika, salt, and black pepper. Simmer for 20-25 minutes until the fish is cooked through.
  6. Garnish with chopped parsley before serving.
