Basque Codfish Stew Recipe

Main Ingredients
- 2 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 large red bell pepper, chopped
- 1 large green bell pepper, chopped
- 400 g canned tomatoes, chopped
- 2 cups vegetable broth
- 500 g codfish, cut into chunks
- 1 teaspoon paprika
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 2 tablespoon parsley, chopped
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and garlic, and sauté until softened.
Add the chopped bell peppers and cook for another 5 minutes.
Stir in the chopped tomatoes and vegetable broth. Bring to a simmer.
Add the codfish chunks, paprika, salt, and black pepper. Simmer for 20-25 minutes until the fish is cooked through.
Garnish with chopped parsley before serving.
