Bayou Vegetable Stew
A hearty vegan stew with a touch of the Bayou.

Main Ingredients
- 1 tablespoon Olive Oil
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 Bell Pepper, chopped
- 2 Carrots, sliced
- 2 cups Vegetable Broth
- 1 can Diced Tomatoes
- 1 cup Okra, sliced
- 1 cup Corn Kernels
- 1 teaspoon Cajun Seasoning
- to taste Salt and Pepper
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent.
Add minced garlic and cook for another minute.
Add bell pepper and carrots, cook for 5 minutes.
Pour in vegetable broth and diced tomatoes, bring to a boil.
Add okra, corn, and Cajun seasoning. Simmer for 30 minutes.
Season with salt and pepper to taste. Serve hot.
