Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Bell Pepper, chopped
  • 2 Carrots, sliced
  • 2 cups Vegetable Broth
  • 1 can Diced Tomatoes
  • 1 cup Okra, sliced
  • 1 cup Corn Kernels
  • 1 teaspoon Cajun Seasoning
  • to taste Salt and Pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent.
  3. Add minced garlic and cook for another minute.
  4. Add bell pepper and carrots, cook for 5 minutes.
  5. Pour in vegetable broth and diced tomatoes, bring to a boil.
  6. Add okra, corn, and Cajun seasoning. Simmer for 30 minutes.
  7. Season with salt and pepper to taste. Serve hot.
