Ingredients

  • 1 head Cauliflower cut into florets
  • 1 cup BBQ Sauce
  • 8 small Tortillas
  • 1 cup Red Cabbage shredded
  • 1 cup Carrots shredded
  • 1 cup Cilantro chopped
  • 1 medium Avocado sliced

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, toss cauliflower florets with BBQ sauce until well coated.
  3. Spread cauliflower on a baking sheet and bake for 25 minutes, until tender and slightly crispy.
  4. Warm tortillas in a dry skillet over medium heat.
  5. Assemble tacos by placing BBQ cauliflower on tortillas, then top with shredded cabbage, carrots, cilantro, and avocado slices.
  6. Serve immediately and enjoy!
