  • 1 can black beans drained and rinsed
  • 2 cups fresh spinach chopped
  • 4 large chicken breasts
  • 1 tablespoon olive oil
  • to taste Salt and pepper

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix black beans and spinach.
  3. Cut a pocket into each chicken breast and stuff with the bean and spinach mixture.
  4. Heat olive oil in a pan over medium heat and sear chicken breasts until golden brown.
  5. Transfer chicken to a baking dish and bake for 20-25 minutes or until cooked through.
