Bean and Veggie Stuffed Peppers

Main Ingredients
- 4 bell peppers
- 1 can black beans drained and rinsed
- 1 cup cooked quinoa
- 1 small onion diced
- 2 cloves garlic minced
- 1 cup corn kernels
- 1 cup diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoon olive oil
- Fresh cilantro for garnish
Preheat oven to 375°F (190°C).
Cut the tops off the bell peppers and remove seeds.
In a pan, heat olive oil over medium heat. Sauté onion and garlic until soft.
Add black beans, quinoa, corn, tomatoes, cumin, paprika, salt, and pepper. Cook for 5 minutes.
Stuff the bell peppers with the mixture and place them in a baking dish.
Bake for 30 minutes until peppers are tender.
Garnish with fresh cilantro before serving.
