Ingredients 

Main Ingredients

  • 4 bell peppers
  • 1 can black beans drained and rinsed
  • 1 cup cooked quinoa
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoon olive oil
  • Fresh cilantro for garnish

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds.
  3. In a pan, heat olive oil over medium heat. Sauté onion and garlic until soft.
  4. Add black beans, quinoa, corn, tomatoes, cumin, paprika, salt, and pepper. Cook for 5 minutes.
  5. Stuff the bell peppers with the mixture and place them in a baking dish.
  6. Bake for 30 minutes until peppers are tender.
  7. Garnish with fresh cilantro before serving.
