Instructions
1. Preheat oven to 400°F (200°C). Place beef bones on a baking sheet and roast for 30 minutes.
2. Transfer roasted bones to a large pot. Add carrots, celery, onion, garlic, apple cider vinegar, salt, pepper, and water.
3. Bring to a boil, then reduce heat to a simmer. Cook for at least 4 hours, skimming off any foam.
4. Strain the broth through a fine-mesh strainer. Discard solids.
5. Let the broth cool, then refrigerate. Skim off any fat that solidifies on top before using.
