Ingredients 

Main Ingredients

  • 2 cups Vegan ground beef
  • 1 cup Enchilada sauce
  • 1 cup Black beans drained and rinsed
  • 1 cup Corn kernels frozen or canned
  • 8 pieces Corn tortillas cut into strips
  • 1 cup Vegan cheese shredded
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 tablespoon Olive oil
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • to taste Salt and pepper

Instructions 

  1. 1. Preheat your oven to 375°F (190°C).
  2. 2. In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until softened.
  3. 3. Add vegan ground beef, cumin, chili powder, salt, and pepper. Cook until browned.
  4. 4. Stir in black beans and corn kernels. Cook for another 5 minutes.
  5. 5. In a baking dish, spread a thin layer of enchilada sauce.
  6. 6. Layer tortilla strips, vegan beef mixture, and vegan cheese. Repeat layers, finishing with a layer of cheese on top.
  7. 7. Bake in preheated oven for 20-25 minutes, until cheese is melted and bubbly.
  8. 8. Let it cool for a few minutes before serving.
