Ingredients 

Main Ingredients

  • 1 cup chickpeas, mashed
  • 0.5 cup breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoon olive oil
  • 4 whole wheat wraps
  • 1 cup shredded lettuce
  • 1 tomato, sliced
  • 0.5 cucumber, sliced
  • 0.25 cup vegan yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh parsley

Instructions 

  1. 1. In a mixing bowl, combine mashed chickpeas, breadcrumbs, onion, garlic, cumin, coriander, smoked paprika, salt, and pepper. Mix well.
  2. 2. Form the mixture into small patties or koftas.
  3. 3. Heat olive oil in a frying pan over medium heat. Cook the koftas for about 3-4 minutes on each side until golden brown.
  4. 4. In a small bowl, mix vegan yogurt, lemon juice, and chopped parsley to make the sauce.
  5. 5. Assemble the wraps by placing shredded lettuce, tomato slices, cucumber slices, and koftas on each wrap. Drizzle with the yogurt sauce.
  6. 6. Roll up the wraps and serve immediately.
