Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, sliced
  • 1 stalk celery, sliced
  • 1 cup mushrooms, sliced
  • 1 cup broccoli florets
  • 6 cups vegetable broth
  • 1 cup noodles
  • 1 tablespoon soy sauce
  • to taste Salt and pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Add carrot, celery, and mushrooms, cook for 5 minutes.
  4. Pour in vegetable broth, bring to a boil.
  5. Add noodles, cook according to package instructions.
  6. Add broccoli florets, cook for another 5 minutes.
  7. Stir in soy sauce, salt, and pepper.
  8. Serve hot.
