Ingredients

  • 4 lbs beef short ribs
  • 2 tablespoon olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoon tomato paste
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • to taste salt and pepper

Instructions 

  1. 1. Preheat your oven to 325°F (163°C).
  2. 2. Season the short ribs with salt and pepper.
  3. 3. Heat the olive oil in a Dutch oven over medium-high heat. Brown the short ribs on all sides, then remove and set aside.
  4. 4. In the same pot, add the chopped onion and cook until softened. Add the garlic and cook for another minute.
  5. 5. Stir in the tomato paste, then add the beef broth and red wine. Bring to a simmer.
  6. 6. Return the short ribs to the pot, add the thyme and rosemary sprigs, and cover with a lid.
  7. 7. Transfer the pot to the preheated oven and cook for about 3 hours, or until the meat is tender and falling off the bone.
  8. 8. Remove the pot from the oven and let it rest for a few minutes before serving.
