Ingredients

  • 1 cup Quinoa cooked
  • 1 can Black Beans drained and rinsed
  • 1 cup Corn Kernels fresh or frozen
  • 1 cup Cherry Tomatoes halved
  • 1 cup Lettuce shredded
  • 1 avocado Avocado sliced
  • 1 tablespoon Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 lime Lime cut into wedges

Instructions 

  1. 1. Cook the quinoa according to package instructions.
  2. 2. In a skillet, heat olive oil over medium heat. Add black beans, corn, cumin, chili powder, garlic powder, salt, and pepper. Cook for 5-7 minutes, stirring occasionally.
  3. 3. In a bowl, combine cooked quinoa, black bean mixture, cherry tomatoes, and lettuce. Top with avocado slices.
  4. 4. Serve with lime wedges on the side.
