Instructions
Heat olive oil in a large pot over medium heat.
Add onion and garlic, sauté until translucent.
Add carrots and potatoes, cook for 5 minutes.
Stir in green beans, corn, and peas.
Pour in vegetable broth and diced tomatoes.
Add thyme, rosemary, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 30 minutes.
Serve hot.
