Instructions
1. Preheat oven to 400°F (200°C). Wrap beets in foil and roast for 30 minutes or until tender. Let cool, then peel.
2. In a blender, combine roasted beets, chickpeas, garlic, tahini, lemon juice, olive oil, cumin, salt, and pepper. Blend until smooth.
3. Adjust seasoning if needed. Serve with pita bread or veggies.
