Ingredients 

Main Ingredients

  • 2 medium beets roasted and peeled
  • 1 can chickpeas drained and rinsed
  • 2 cloves garlic minced
  • 3 tablespoon tahini
  • 1 lemon juice
  • 2 tablespoon olive oil
  • 1 teaspoon cumin
  • to taste salt
  • to taste black pepper

Instructions 

  1. 1. Preheat oven to 400°F (200°C). Wrap beets in foil and roast for 30 minutes or until tender. Let cool, then peel.
  2. 2. In a blender, combine roasted beets, chickpeas, garlic, tahini, lemon juice, olive oil, cumin, salt, and pepper. Blend until smooth.
  3. 3. Adjust seasoning if needed. Serve with pita bread or veggies.
